The last time I checked the game's car art files I saw that the cola truck was missing. I thought that I had made a copy of it and ported it to my files, but it turned out that I actually moved it to my files. This won't make the game crash, will it?

As a simple answer to your question, yeah. That will cause the vanilla game to crash if you attempt to run the game without any mods and the game tries to load cCola.p3d. The easiest fix would just be to move the Cola Truck P3D back into the art/cars directory.
If you accidentally deleted it/edited it though, I uploaded my own copy of cCola.p3d here to help out so you don't have to fiddle with the game installation to get it back.
