After examining the footage, I'm sorry to say that those aren't items. They are, in fact, an early version of the flag icons used for streetraces.

From standing here, it is possible to see the tree props, as well as one of the gas signs (which is probably why there are two, as one was just copy and pasted higher up so that the player can see it)

Because of the way the game's music system works, there is no simple way for a music track to be changed to something else.
